If your hanging off the cliff Press TRIANGLE repeatedly -> he will grab talbots leg. If talbot smashes you on the ground Press SQUARE repeatedly --> he will knock talbot with his on head. Yeah but there are 2 problems: 1) If I start a brand new save without transferring my stuff, dont I have to beat the game on Hard first in order to unlock crushing again? and 2) if i DO transfer over my stuff, im not sure if the new game will give me the trophy for beating it on crushing, since i did the transfer.

I just finished the game on Crushing (and got my platinum ) but it seems like the Crushing difficulty is getting easier with every Uncharted game. It still has some challenging parts, but it's not nearly as hard as Uncharted: Drake's Fortune.
You must continually lay it on Talbot in crushing. Dodge his attacks and counterattack when given the chance. The less he hits you, the faster the fight will go, as Talbot seems to get more reckless with the knife after every reversal you pull on him. But the key to beating Talbot is to dodge/counterattack when they prompt you too.
